Dry Ingredients

    - Cornmeal

  • 120 g

    - Whole wheat flour

  • 1 tblsp

    - Baking powder

  • 1 tsp

    - Salt

Wet Ingredients

  • 80 g

    - Dairy-free spread, melted

  • 2 tblsp

    - Maple syrup

  • 250 ml

    - Almond milk

  • 1 tblsp

    - Apple cider vinegar

Add-ins

  • 2 ea

    - Jalapeno, finely chopped

  • 1 tsp

    - Red pepper flakes

Method


Preparation

    Preheat

    Preheat oven to 200°C (400°F). Grease an 8-inch square baking pan.

    Mix dry ingredients

    In a large bowl, combine cornmeal, whole wheat flour, baking powder, and salt.

    Combine wet ingredients

    In another bowl, whisk together melted dairy-free spread, maple syrup, almond milk, and apple cider vinegar.

    Combine and bake

    Add wet ingredients to dry ingredients, stir until just combined. Fold in jalapenos and red pepper flakes. Pour into the prepared pan and bake for 20-25 minutes.

    For a milder version, reduce the jalapenos and red pepper flakes by half.
