Ingredients
Spiced Beef
- 500 g
- Beef mince
- 2 tblsp
- Olive oil
- 4 clove
- Garlic
minced
- 2 tsp
- Ground cumin
- 2 tsp
- Ground coriander
- 1 tsp
- Paprika
- 0.5 tsp
- Black pepper
- 2 tsp
- Salt
- 4 tblsp
- Honey
Sultana Rice
- 1.5 cup
- Basmati rice
Rinsed
- 3 cup
- Water
- 2 tblsp
- Dairy-free spread
- 0.3 cup
- Sultanas
- 1.5 tsp
- Salt
- 120 g
- Spinach leaves
- 2 tblsp
- Lemon juice
Method
Cooking the Rice

Saute
In a pot, melt the dairy-free spread on a medium heat & add half the ginger and garlic. Saute for 1 minute until fragrant and then add the sultanas and rice and cook for another minute.

Boil
Add 3 cups of water, salt, and bring to the boil.

Simmer
Reduce the heat to low, cover, and let simmer for 12 minutes, or until the rice is cooked and the water is absorbed. Remove from heat.
Preparing the Beef

Sauté
In a large pan, heat the oil over high heat. Add the beef and salt and cook until starting to brown.

Add Spices
Add remaining garlic, ginger & spices and stir through. Add honey and pan-fry until starting to crisp.

Add Spinach
Add spinach and cook until starting to wilt. Add lemon juice and adjust seasoning to taste.
Serving

Combine
Serve beef piled on top of the sultana rice with a wedge of lemon.
Notes
1
For an extra kick, add a pinch of chili powder to the beef while cooking.

Garnish with fresh coriander for a pop of color and flavor.
