Ingredients


Vegetables

  • 1 ea

    - Eggplant

    sliced

  • 2 ea

    - Zucchini

    sliced

  • 1 ea

    - Red bell pepper

    sliced

  • 4 ea

    - Tomatoes

    sliced

Sauce

  • 2 tblsp

    - Olive oil

  • 1 ea

    - Red bell pepper

    diced

  • 1 ea

    - Onion

    chopped

  • 3 clove

    - Garlic

    minced

  • 400 g

    - Diced tomatoes

  • 2 tsp

    - Herbes de Provence

    (or mixed dried herbs)

  • 1 tsp

    - Salt

  • 0.5 tsp

    - Black pepper

Method


Prepare the Sauce

    Saute

    Heat olive oil in a pan over medium heat. Add chopped onions and minced garlic, saute until translucent.

    Add Tomatoes

    Stir in the diced tomatoes, Herbes de Provence, salt, and black pepper. Let it simmer for 10 minutes until slightly thickened.

Assemble the Ratatouille

    Layer Vegetables

    In a baking dish, spread a layer of sauce at the bottom. Arrange the sliced vegetables in alternating patterns on top of the sauce.

    Season

    Drizzle a little olive oil over the top and sprinkle with additional Herbes de Provence, salt, and pepper.

Bake

    Cover with parchment paper and bake in a preheated oven at 180°C (350°F) for 30-45 minutes until the vegetables are tender.

    Final Roast

    Right before serving, remove parchment paper and roast uncovered for 15 minutes.

    Remove from oven and let it cool slightly. Serve warm with crusty bread.
