I was gifted this recipe by my actual mum—affectionately known as Nanna to my daughter. She passed this lemony legacy on after I casually mentioned I’d made a packet mix pudding. The scandal. Ingredients


Pudding

  • 140 g

    - Soft bread crumbs

  • 310 ml

    - Oat milk

    (1 1/4 cups)

    Boiling

  • 2 ea

    - Egg

  • 85 g

    - Butter alternative

  • 55 g

    - White Sugar

  • 1 ea

    - Lemon

    Rind & Juice

Method


Pudding

  • 1

    Soak breadcrumbs

    Place breadcrumbs, sugar & butter in a bowl. Pour over boiling oat milk and cover. Sit for 30 mins.

    Beat eggs

    Beat eggs in a separate bowl and add to soaked breadcrumb mixture.

    Add lemon

    Add juice and rind of the lemon and mix well.

    Bake

    Place mixture in a dish and bake for 30 mins or until starting to golden on top.

Notes

    Serve with vanilla ice-cream.

    Best served hot as soon as it comes out of the oven.

    If the lemon you use is particuarly tart, add an extra 30g sugar.
