Ah, Spaghetti Carbonara. The dish of legends, and by legends, I mean my Uncle Tony, who swears he invented it. Spoiler: he didn't. But every time I make this dish, I'm reminded of his tall tales and how he always managed to burn the garlic. Thankfully, this recipe has no such issues.

The secret to a perfect Carbonara is in the timing and the ingredients. Using dairy-free spread instead of butter is a game-changer for those of us who want to enjoy the creamy goodness without the dairy. And let's talk about the eggs – the fresher, the better. Trust me, your taste buds will thank you.

I remember whipping up this dish for a family gathering. My cousin, who hates trying anything new, couldn't stop eating it. She even asked for the recipe, which is when I knew I had a winner. It's simple, quick, and the perfect dish to impress without the stress.

So, whether you're cooking for a date, family, or just treating yourself after a long day, this Spaghetti Carbonara will leave everyone asking for seconds. Just make sure you have enough spaghetti to go around!

Method

Cooking the Pasta

  • 1

    Boil

Bring a large pot of salted water to a boil and cook the spaghetti until al dente, about 8-10 minutes. Reserve 1 cup of pasta water and drain the rest.

Preparing the Sauce

  • 1

    Sauté

In a large pan, melt the dairy-free spread over medium heat. Add the pancetta and cook until crispy, about 4 minutes. Add the minced garlic and sauté for another minute.

In a bowl, whisk together the egg yolks, almond milk, nutritional yeast, salt, and black pepper until smooth.

Combining Ingredients

  • 1

    Combine

Add the cooked spaghetti to the pan with the pancetta. Remove from heat and quickly add the egg mixture, tossing continuously to create a creamy sauce. Add reserved pasta water as needed to achieve desired consistency.

Finishing Touches

  • 1

    Garnish

Sprinkle with chopped parsley and additional black pepper before serving.

Notes

  • 1

Ensure you remove the pan from heat before adding the egg mixture to prevent scrambling.

  • 2

For a richer flavor, add a pinch of smoked paprika to the sauce.

The nutritional yeast is a nice touch. Adds a cheesy flavor without the cheese!
