Pasta
- 400 g
- Spaghetti
Sauce
- 3 tblsp
- Dairy-free spread
- 150 g
- Pancetta
diced
- 2 clove
- Garlic
minced
- 3 ea
- Egg yolks
- 0.5 cup
- Oat milk
- 2 tblsp
- Nutritional yeast
- 1 tsp
- Salt
- 0.5 tsp
- Black pepper
freshly ground
- 2 tblsp
- Parsley
chopped
Method
Cooking the Pasta

Boil
Bring a large pot of salted water to a boil and cook the spaghetti until al dente, about 8-10 minutes. Reserve 1 cup of pasta water and drain the rest.
Preparing the Sauce

Sauté
In a large pan, melt the dairy-free spread over medium heat. Add the pancetta and cook until crispy, about 4 minutes. Add the minced garlic and sauté for another minute.

In a bowl, whisk together the egg yolks, almond milk, nutritional yeast, salt, and black pepper until smooth.
Combining Ingredients

Add the cooked spaghetti to the pan with the pancetta. Remove from heat and quickly add the egg mixture, tossing continuously to create a creamy sauce. Add reserved pasta water as needed to achieve desired consistency.

Sprinkle with chopped parsley and additional black pepper before serving.
