After much experimentation (and a few hilarious kitchen mishaps), I've crafted a dairy-free version that even my nonna would approve of.
When I first stumbled upon the secret to this recipe, I was at a family reunion. My cousin, who is lactose intolerant, lamented her inability to enjoy Alfredo. Challenge accepted! Ingredients
Pasta
- 400 g
- Fettuccine
Sauce
- 150 g
- Cashews
soaked
- 3 clove
- Garlic
minced
- 3 tblsp
- Nutritional yeast
- 2 tblsp
- Lemon juice
- 50 g
- Dairy-free spread
- 1 tsp
- Salt
- 1 tsp
- Brown sugar
- 0.5 tsp
- Black pepper
- 200 ml
- Oat milk
(Or other milk alternative)
Method
Prepare the Pasta

Boil
Cook the fettuccine according to the package instructions until al dente. Drain and set aside.
Make the Sauce

Blend.
In a blender, combine soaked cashews, garlic, nutritional yeast, lemon juice, dairy-free spread, brown sugar, salt, black pepper, and oat milk. blend until smooth and creamy.

Heat
Transfer the sauce to a pan and warm over medium heat, stirring occasionally, until heated through.
Combine and Serve

Add the cooked fettuccine to the sauce and toss until the pasta is well coated.

Serve
Divide among plates and garnish with additional black pepper if desired.
Notes

Feel free to add grilled chicken or sautéed mushrooms for extra protein.

If you can get your hands on a dairy-free cream, substitute the cashews with 200mls for a nut free version.
