My first taste of these buttery delights was on a trip to Paris, where I attempted to blend in with the locals by devouring one for breakfast each day. Of course, my attempts at perfecting them at home were less glamorous but equally filled with laughter and flour-covered friends.
While croissants are typically laden with butter, this dairy-free version is just as satisfying. The secret? A high-quality dairy-free spread that brings the same richness without compromising flavor. Trust me, you won't miss the dairy one bit.
This recipe has become a weekend staple in my household, often accompanied by a strong cup of coffee and the weekend crossword. It's a chance to slow down, savor each bite, and perhaps reminisce about that first Parisian croissant experience.

Ingredients
Dough
- 500 g
- All-purpose flour
- 50 g
- Sugar
- 10 g
- Salt
- 7 g
- Instant yeast
- 300 ml
- Water
warm
- 300 g
- Dairy-free spread
softened
Egg Wash
- 1 ea
- Egg
beaten
- 1 tblsp
- Water
Method
Prepare the Dough

Mix
In a large bowl, combine the flour, sugar, salt, and yeast. Gradually add the warm water and mix until a dough forms.

Knead
Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth. Cover and let rise for 1 hour until doubled in size.
Folding the Dough

Roll
Roll out the dough into a large rectangle. Spread the softened dairy-free spread over two-thirds of the dough.

Fold
Fold the dough into thirds, like a letter, starting with the unbuttered third. Roll out the dough again and repeat the folding process twice more.

Repeat
You can continue this process a few more times if you wish to have extra flaky, fine layers. I recommend chilling the dough for half an hour in the fridge (glad-wrapped) between each roll.
Shape the Croissants

Cut
Roll the dough into a large rectangle and cut into triangles. Roll each triangle from the base to the tip to form croissant shapes.

Proof
Place the croissants on a baking sheet, cover, and let rise for 1 hour until puffy.
Bake

Preheat
Preheat your oven to 200°C (400°F).

Brush
Mix the beaten egg with water and brush over the croissants.

Bake
Bake for 15-20 minutes until golden brown and flaky.
Notes

For a sweet twist, add a spoonful of jam inside each croissant before rolling.

Ensure the dough is cold when rolling out to get the best flaky layers.

A dusting of icing sugar on top makes these the ultimate treat to have with a coffee.
