Lasagna is one of those dishes that instantly transports me back to family gatherings, where everyone is eagerly waiting for that first slice. This dairy-free version of beef lasagna is not only a hit in my household but also at our neighborhood potlucks. It's always amusing to see the surprise on people's faces when they realize it's dairy-free.

The secret to this recipe's success? It's all about layering the flavors. From the rich beef sauce to the creamy dairy-free béchamel, every bite is a delightful experience. I remember the first time I tried this recipe; it was a chilly autumn evening, and the warmth of the lasagna was just what we needed.

I stumbled upon the idea of a dairy-free lasagna when a friend with lactose intolerance came over for dinner. Determined to create something everyone could enjoy, I experimented with different dairy alternatives. The result was a lasagna that was not only lactose-friendly but also incredibly tasty.

Ingredients


Beef Sauce

  • 1 ea

    - Onion

    chopped

  • 3 clove

    - Garlic

    minced

  • 500 g

    - Ground beef

  • 400 g

    - Cherry tomatoes

    Canned

  • 3 whole

    - Tomato

    Diced

  • 2 cup

    - Beef stock

  • 1 tsp

    - Dried oregano

  • 1 tsp

    - Dried basil

  • 2 tblsp

    - Worcestershire sauce

  • 2 tblsp

    - Brown sugar

    Heaped

  • 1 tsp

    - Salt

  • 0.5 tsp

    - Black pepper

Dairy-Free Béchamel

  • 150 g

    - Dairy-free spread

  • 100 g

    - Plain flour

  • 750 ml

    - Dairy-free milk

    (i use oat)

  • 1 tsp

    - Salt

  • 1 tblsp

    - Wholegrain mustard

  • 1 tsp

    - Dijon mustard

  • 1 sprig

    - Parsley

    Chopped

Assembly

  • 250 g

    - Lasagna sheets

  • 200 g

    - Dairy-free cheese

    grated

Method


Prepare the Beef Sauce

    Heat

    Oil in a large pan over medium heat. add chopped onion and minced garlic, and sauté until softened.

    Caramelize beef

    Personally, I like to salt the beef and grill it on the bbq until it is nicely caramelized on one side, before returning it to the pot. you can also just fry it in the pan, although you will probably struggle to get it to brown.

    Stir in

    The remaining beef sauce ingredients and leave to simmer on the stove on medium heat until a slightly thicker consistency.

Prepare the Dairy-Free Béchamel

    Make roux

    Melt dairy-free spread in a saucepan over medium heat. stir in flour and cook for 1 minute.

    Whisk in milk

    Whisk in the milk quickly to prevent clumps.

    Add remaining

    Add remaining béchamel ingredients and season until tasty.

Assemble the Lasagna

    Preheat

    Preheat oven to 180°c (350°f).

    Assemble the layers

    Add a layer of lasagna sheets, then beef sauce, then white sauce. repeat until ingredients are finished.

    Final layer

    I usually finish with a layer of pasta sheets, white sauce and a sprinkle of dairy free cheese and any herb you have handy (dried or otherwise).

    Bake

    Place in preheated oven for 40 minutes, or until golden, bubbling and crispy around the edge.

    For a spicier kick, add a pinch of red pepper flakes to the beef sauce.

    Let the lasagna rest for 10 minutes before serving for easier slicing.

    Pairs perfectly with a light leafy green salad & vinaigrette.
